Ingredients

Scale
  • 2 chicken breasts, sliced into thin strips
  • 1 green bell pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 large onion, julienned
  • 2 carrots, sliced thin
  • 200 g mushrooms, sliced
  • 2 celery stalks, sliced on the diagonal
  • 2 cloves garlic, minced
  • 1 piece of fresh ginger, grated
  • 200 g bean sprouts, sprouted
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch, dissolved in 1/4 cup water
  • 2 tablespoons sesame oil (optional for extra flavor)
  • Salt and pepper to taste
  • Cooked rice, for serving

Optional substitutions: If you’re looking to make this recipe gluten-free, you can substitute soy sauce with tamari, and for those who prefer a vegan version, use tofu instead of chicken.

Instructions

Step 1: Cook the Chicken

Start by heating a little oil in a large skillet or wok over medium-high heat. Add the sliced chicken and sauté until browned and cooked through. This should take about 6-7 minutes. Once the chicken is cooked, remove it from the pan and set it aside.

Step 2: Sauté the Aromatics

In the same skillet, add a bit more oil if necessary. Toss in the minced garlic and grated ginger. Stir-fry for about 1 minute until fragrant. This step adds a wonderful depth of flavor to your dish.

Step 3: Stir-fry the Vegetables

Next, add the onion, bell peppers, carrots, mushrooms, and celery to the pan. Stir-fry for about 5-7 minutes, ensuring the veggies are tender but still crisp.

Step 4: Add the Chicken Back In

Return the cooked chicken to the skillet and stir to combine. At this point, the kitchen will be filled with delicious aromas!

Step 5: Add the Bean Sprouts and Sauce

Now, add the bean sprouts and mix everything together. In a separate bowl, combine the soy sauce, oyster sauce, and the cornstarch mixture. Pour this sauce over the chicken and vegetables. Stir constantly until the sauce thickens (about 2-3 minutes).

Step 6: Taste and Adjust

Taste your dish and adjust the seasoning with salt and pepper to your preference.

Step 7: Serve and Enjoy

Serve your Chop Suey Chino hot over a bed of cooked rice. It’s as simple as that!

Notes

  • Use Fresh Ingredients: The fresher your ingredients, the more vibrant and flavorful your dish will be.
