- 1/4 cup brown sugar
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract

- Powdered sugar for dusting

- For gluten-free: Substitute the all-purpose flour with a gluten-free flour blend.
- For low sugar: Reduce the amount of sugar or use a sugar substitute like Stevia.
Instructions
Step 1: Preheat the Oven and Prepare the Pan
Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan with butter or non-stick spray and line it with parchment paper. Make sure the paper overhangs slightly to make removal easier after baking.
Step 2: Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, and salt. Stir everything together to ensure the dry ingredients are evenly distributed.
Step 3: Whisk Wet Ingredients
In another bowl, whisk together the eggs, melted butter, and vanilla extract until the mixture is smooth and well-combined.
Step 4: Combine Wet and Dry Ingredients
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can affect the cake’s texture.
Step 5: Add the Bananas
Fold in the mashed bananas, ensuring they are evenly distributed throughout the batter.
Step 6: Bake the Cake
Pour the batter into the prepared pan and spread it out evenly with a spatula. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Cool and Roll the Cake
While the cake is still warm, carefully invert it onto a clean kitchen towel dusted with powdered sugar. Gently peel off the parchment paper and then, starting from one of the shorter ends, roll the cake and towel together into a tight log. Let it cool completely.
Step 8: Add Caramel and Re-Roll
Once the cake is cool, unroll it and spread the caramel sauce evenly over the surface. Roll it back up carefully without the towel, ensuring the caramel is fully enclosed inside.
Step 9: Slice and Serve
Slice the roulade into individual servings and dust with powdered sugar before serving.

- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cake will be.
- Don’t overfill with caramel: Too much caramel sauce can make the cake soggy, so be sure to spread it evenly but sparingly.
- Let the cake cool completely: Cooling is crucial to avoid the cake from breaking apart when you roll it up.
